butternut squash soup with sautéed shrimp

I know I’ve been AWOL from blogging lately. It’s been so, so busy lately. But RH and I did take the time tonight to make a really wonderful dinner. It was the first time I’ve ever made soup from scratch, and I think I’m hooked! It was amazing and incredibly healthy—just squash, stock, spices, and shrimp. That’s it. No butter, cream, etc. and it still tasted wonderful!

February 8, 2009 - 2:13 am Lily - I really like making gazpacho from scratch. It's a good summer/spring soup. The only other soup I regularly make from scratch is potato soup. Peel two potatoes per person and cut into 1/4 inch thick slices. Boil until you can stick a fork in the slices easily. Strain and save the water. Mash up the potatoes really well (or not so well depending on how you like your soup). Put mashed potatoes back in the pot, with the reserved water. Salt to taste. Boil. Add a roux to thicken the soup. When the soup is thick enough (according to your preferences) pour into bowls. Add sharp cheddar cheese, diced white or green onions, pepper and a dash of white vinegar. Enjoy! It's especially good on cold cold days. It's also super easy to make. :)

January 11, 2009 - 2:09 pm Tim - We make a white bean soup pretty regularly that's probably pretty similar to this. Start with cooking onion/shallot, carrot and celery. Add broth/stock and white beans (we like the small ones). Add salt and pepper (lots of black pepper). Cook for a bit and puree. That's it. You can start with bacon or ham if you like and add it back just before pureeing, but it's not necessary.
